{ strawberry coffee cake minis }


This morning I was up at the crack of dawn vigorously cleaning my kitchen and stuff. I had this cute little basket of freshly picked strawberries that I wanted to use up, so I made these very yummy strawberry coffee cake minis and brought them to my Grandparents when we went there for tea this morning.
The first time I had these was when Madelyn made them on my birthday and delivered them to my door. I knew then that I'd definitely have to make them! They were that good. smile

Here's the recipe:

Strawberry Coffee Cake Minis

1 cup all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
1 egg
2 tablespoons melted butter
1 1/2 cups fresh strawberries, sliced (I bet raspberries would be good, too!)

Topping:
1/2 cup flour
1/2 cup sugar
1/4 cup butter

  • Sift together the 1 cup flour, 1/2 cup sugar, baking powder, and salt.
  • Add milk, egg, and melted butter; beat 2 minutes.
  • Spoon batter into a greased or paper lined muffin tin.
  • Top with sliced strawberries.

Prepare topping:
  • Combine 1/2 cup flour and 1/2 cup sugar; cut in butter until mixture resembles coarse crumbs.
  • Sprinkle crumb topping over the strawberries.

375° for about 25 - 30 minutes.
Let them cool about 3-5 min

Serve with a nice hot cup of tea and enjoy!

yummy...ok i have just picked strawberries so your timing is like clock work....guess what we are having for breakfast tomorrow morning???? Hope your Summer is off to a great start...your images are amazing....

YUMMMM!!! We just picked 4 pounds of raspberries from our neighbor's back yard - I wonder if they'd work too...time to find out!

OMG - I tried the raspberries...and made 4 batches. Topped with vanilla infused whipped cream and julienned basil. It is really THE BEST coffee cake ever! Thank you so much!
